Instructions

  • Peel and slice your potatoes to your preferred sizes
  • Grease your sliced fries in oil and sprinkle with spices and salt
  • Bake until golden brown and crispy

 

  1. OFSP Gari

Ingredients

  • Orange Flesh Sweet Potatoes

Instructions

  • Peel and cut your sweet potatoes and blend it with water
  • Squeeze the water out of the blended potato with the help of a cloth and a juice presser
  • Set it through a strainer into a pan to make it lighter and fluffy
  • Dry fry it in a pan on a low heat and stir consistently until it is dry and crispy

 

  1. Potato Fufu

Ingredients

  • Orange Flesh Sweet Potatoes
  • Cassava

Instructions

  • This is similar to the usual fufu with cassava, plantain, cocoyam or yam.
  • Boil the 100g OFSP with the 400g cassava, plantain, cocoyam or yam.
  • Pound separately and mix in mortar as fufu is prepared.

Ingredients

  • Orange Flesh Sweet Potatoes
  • Maize

Instructions

  • You can prepare this by adding 100g of OFSP dough to 200g maize dough.
  • Mix together before cooking.

 

  1. Orange-and-Spice Mashed Sweet Potatoes

Ingredients

  • 2 pounds orange-fleshed sweet potatoes, peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil, coconut oil, or unsalted butter, room temp
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon freshly grated orange zest
  • 3 tablespoons reduced fat (2 percent) milk, or more to taste

Instructions

  • Put potato pieces in a pot and cover with cold water by 1 inch. Bring to a boil, then simmer until tender, 8–12 minutes. Drain, then pour back into pot (if using a hand mixer) or a mixing bowl (if using a standing mixture with paddle attachment).
  • Add butter, cinnamon, allspice, and orange zest. Beat on medium speed until smooth and creamy. Add milk and beat until uniform and creamy. For a lighter texture, add a bit more milk. Stir in salt to taste.
  1. Buff loaf

Ingredients

  • Flour

Instructions

  • Add 100g of the cooked and mashed OFSP to 600g of flour after adding water to your flour.
  • Fry it in hot oil

Ingredients

  • Orange Flesh Sweet Potatoes
  • Preferred fruit juice

Instructions

  • Cook, Mash and strain OFSP. Add to your fruit juice and enjoy
